Prep Time: 15 minutes – Cook Time: 10 minutes – Serves 4
Ingredients
1.5 tbsp – Olive Oil
1 lb – Ground Chicken
.5 cup – Pitted Olives, Finely Chopped
1 large – Egg, lightly beaten
2 tbsp – Parsley, chopped
1 tbsp – Worcestershire Sauce
3 cloves – Garlic minced
.5 tsp – Lemon zest
.5 tsp – pepper, freshly ground
1/8 tsp – Salt, course
Cooking Instructions
HEAT oven to 425 degrees. Brush a baking pa with 1 tbsp oil. Mix chicken with olives, egg, parsley, Worcestershire, garlic, lemon zest, pepper and salt.
SHAPE into 16 balls (about 2 inches each) with damp hands. Brush tops with remaining .5 tbsp ol. Bake in pa until just cooked through, 8-10 minutes
HEAT broiler. Broil meatballs until golden brown, 2-3 minutes
How to Serve:
Option 1: Serve meatballs over cooked and season spinach and roasted tomatoes
Option 2: Sever meatballs over freshly sliced cubed cucumbers and halved cherry tomatoes with a side plan yogurt
